  • 1 2/3 Cup granulated sugar (Approx 333 g)
  • ¾ Cup unsalted butter (Approx 170g) at Room temperature
  • ½ Cup whole milk (Approx 120ml) at room temperature
  • ½ Cup sour cream (Approx 120ml) at room temperature
  • ½ Cup fresh lemon Juice (Approx 60g)
  • 1 Table Spoon of lemon zest
  • 1 Table Spoon Vanilla Extract (Approx 15 ml)
  • 1 1/3 cups fresh Blueberries (Approx 180g)

For making Reduction

  • 1 Tablespoon water (Approx 15ml)
  • 1 ½ Cup fresh blueberries (Approx 203g)
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon fresh lemon juice

For Lemon Butter Cream

  • 1 ½ Cups unsalted butter (Approx 339g) at room temperature
  • 6 Cups of confectioners' sugar (Approx 720g)
  • 3 Tablespoon Lemon Juice 45g
  • ¼ Teaspoon kosher salt

  • Blueberries: It is preferred to use fresh blueberries; frozen ones need to be thawed first and then dried off.
  • Unsalted Butter: Use simple, plain, unsalted butter; different manufacturers add different quantities of salts if you go with salted one; by using unsalted one, you can add a grain of salt per your taste.
  • Milk: You can use dairy Milk alternatives such as nut milk or soy milk if you are sensitive to it.
  • Sour cream is the best for your perfect blueberry cake, but you can use yogurt; the ideal will be plain Greek yogurt.
  • Egg whites are recommended for the lighter tone of the cake, but if you want to put the whole egg, halve the quantity of sour cream in your Recipe.

How to make Lemon Blueberry Cake?

  1. Set and Preheat the oven to 350F. Now, take three six-inch pans, butter, and flour them. Sift the flour, add salt, sugar, and baking powder, whisk them together in a large bowl, and set aside.
  2. Add ingredients like milk, egg whites, vanilla essence, butter, and sour cream into another bowl and whisk them together. Remember, butter must be soft or melting if desired. Mix the blueberries in a tablespoon of cornstarch or flour in another small bowl.
  3. Now add mixes, dry and wet, and mix them thoroughly; you can use a stand mixer or do it by hand. Once they become one, add the lemon zest and blueberries and mix them too. Divide the batter equally in three pans, toss them in the pre-heart oven, set the timer to 25-30 minutes, and let them bake.
  4. While your cakes are baking, prepare the blueberry reduction. Mix blueberries, water, lemon juice, and sugar in a pan over medium heat. Mash the blueberries and let them simmer until they are reduced to half; take the mixture out and let it cool off to settle.
